BAKED CHICKEN AND BEAN
WHAT TO SERVE WITH BAKED CHICKEN AND BEANS
Lots of ingredients goes in the pot to make this a really delicious stew.
Serves 4 to 6

2 onions, diced
1/2 cup oil
1.2 kg (2.5 lb) mix chicken and thigh
115 g (4 oz) tomato paste
2 tsp turmeric
4 tsp paprika
2 tsp cumin
1 tsp cinnamon
2 chicken cubes
2 litres (4 pt) water (boiled)
500 g (1lb) green beans, cut in two
1 can mixed beans
500 g (1 lb) baby marrows sliced​

Preheat oven to 150°C (300°F)

Fry onions in pot with oil till transparent.

Add chicken pieces till brown

Add the tomato paste,the chicken stock to the boiled water and stir into pot.

Add vegetables, and all the spices. Add salt and pepper and mix well.

Bring the liquid to the boil, cover and transfer to the oven.

Cook for about 1 hour.

If too much liquid, remove lid and cook without the lid to thicken the sauce.
TIPS
* One could use any left over cooked green beans or zucchini/baby marrow instead of the uncooked vegetable; just add them
