APRICOT JAM TART

The easiest of the sweet tart, no need to shop for special ingredients, can be served with cream or ice cream.

APRICOT JAM TART

200 g (7 oz)  butter

1 tbsp  sugar

3 cups flour

3 tsp baking powder

1 egg yolk

3 tbsp smooth apricot jam

  • Mix butter and sugar in mixer till creamy

  • Add flour and mix with a spoon.

  • Add the egg yolk beaten with 2 tsp water

  • Mix all in mixer.  The dough should be soft enough to handle it, not dry (if dry add a little more water)

  • Take 1/5  of dough for the trellis decoration. Spread the rest onto a tart dish sprayed with cooking spray. Prick dough with a folk

  • Warm 3 tbs of apricot jam and spread on dough.

  • Roll the dough set aside for the trellis and cut in neat strips to make the trellis.

  • Brush trellis with 1 yellow egg mixed with one tsp of water.

  • Place in pre heated oven at 180°C (350°F) for ½ hour.

  • Cool and serve with whipped cream.
